5 cups red potatoes, chopped in 1-inch (2.5 cm) cubes
TOSS together potatoes, water, and oil. Place on a cookie sheet and bake at 450°F (230°C) for 10 minutes. Add chicken, stir and continue cooking for an additional 20 minutes.
