3 sweet potatoes (1-1/2 lb./675 g), cut into 2-inch pieces

3 lemon slices (1/2 inch thick)

1 garlic bulb

2 Tbsp. chopped fresh thyme

How do I make it ?

Step 1
Heat oven to 400ºF.
Step 2
Reserve 1 Tbsp. dressing for later use. Toss potatoes and lemon slices with remaining dressing; spread onto rimmed baking sheet sprayed with cooking spray.
Step 3
Peel and discard thin papery outer layers from whole garlic bulb, leaving skins of individual cloves intact. Cut 1/4-inch-thick slice off top of bulb; discard removed slice. Place bulb, cut side up, next to ingredients on baking sheet.
Step 4
Bake 35 min. Remove garlic and lemon slices from pan; cool slightly. Meanwhile, turn potatoes; continue baking 10 min. or until tender.
Step 5
Squeeze garlic bulb to remove pulp from cloves. Serve with potatoes. Discard lemon slices or use as a plate garnish.
