1/2 cup panko bread crumbs
1 egg, beaten
2 cans (150 g each) red salmon, well drained, flaked
2 Tbsp. chopped fresh parsley
1 clove garlic, minced
1 cup Heinz [Seriously] Good Mayonnaise, divided
zest and 1 Tbsp. juice from 1 lemon
1 tsp. crushed red pepper

Heat oven to 400ºF.
Step 2
Spray baking sheet with cooking spray. Add bread crumbs to pie plate.
Step 3
Mix egg, salmon, parsley, garlic and 2/3 cup mayonnaise just until blended; shape into 1/4-inch thick patties. Add, 1 at a time, to bread crumbs; turn to evenly coat both sides of salmon patty with bread crumbs. Place on prepared baking sheet.
Step 4
Bake 8 min. on each side or until salmon cakes are heated through and golden brown on both sides.
Step 5
Meanwhile, mix lemon zest, juice, crushed red pepper and remaining mayonnaise until blended.
Step 6
Serve salmon cakes topped with the mayonnaise mixture.

Make Ahead
The salmon patties can be shaped ahead of time, and the mayonnaise mixture can be prepared ahead of time. Refrigerate up to 4 hours before baking the salmon patties as directed.
Serving Suggestion
Cut additional lemons into wedges. Serve with the salmon cakes.
Special Extra
Season the mayonnaise mixture with ground black pepper to taste before serving with the cooked salmon cakes.
