1 lb. (450 g) boneless skinless chicken thighs, cut into bite-size pieces
1/2 tsp. cayenne pepper
2 stalks celery, chopped
1 sweet red pepper, chopped
1 onion, chopped
1 can (28 fl oz/796 mL) diced tomatoes, undrained
1/2 lb. (225 g) andouille sausage, sliced
1 cup water
1/2 cup long-grain white rice, uncooked

Step 1
Heat 1/4 cup dressing in large deep skillet or Dutch oven on medium heat. Add chicken; cook 4 min., stirring frequently. Stir in cayenne pepper; cook and stir 1 min.
Step 2
Add celery, sweet peppers and onions; stir. Cook 5 min., stirring occasionally.
Step 3
Stir in tomatoes and sausage. Simmer 15 min., stirring occasionally.
Step 4
Add water and rice; stir. Cover; simmer on medium-low heat 15 min. or until rice is tender.
