1 large sweet potato (1 lb./450 g), peeled, cut into 1-inch chunks
1 small rutabaga (1 lb./450 g), peeled, cut into 3/4-inch chunks
2 parsnips (290 g), peeled, cut into 1-inch chunks
1 large carrot (175 g), peeled, cut into 1-inch-thick slices
1/2 cup Heinz Mayochup Sauce
1/2 tsp. garlic salt

Step 1
Heat oven to 375ºF.
Step 2
Combine vegetables in large bowl.
Step 3
Mix remaining ingredients until blended. Add to vegetables; mix lightly.
Step 4
Spread onto rimmed baking sheet sprayed with cooking spray.
Step 5
Roast 45 to 50 min. or until vegetables are tender and golden brown, stirring every 20 min.

Add 3 or 4 sprigs of fresh herbs, such as thyme, rosemary or tarragon, to the vegetable mixture before roasting. For a hit of colour, sprinkle with 1 Tbsp. chopped fresh parsley before serving.

Variation
Prepare this easy-to-make recipe substituting baking potatoes and/or beets for any of the suggested vegetables. Just be aware that if using red beets the other vegetables might turn pink from the red beet juice. To avoid this, use golden beets. Or, toss the red beets with the dressing mixture separately from the other vegetables, and then place them on one side of the prepared baking sheet separate from the other vegetables before roasting as directed.
