4 baking potatoes (1-1/4 lb./565 g)
1 cup loosely packed fresh basil
2 cloves garlic, minced
1/4 cup fresh lemon juice
1/4 cup olive oil
1 Tbsp. sugar
1 tsp. Lea & Perrins Worcestershire Sauce
1/2 tsp. cayenne pepper
1/2 lb. (225 g) frozen uncooked cleaned (with tails left on) large shrimp, thawed
1/2 lb. (225 g) sea scallops
1 halibut fillet (1/2 lb./225 g), cut into 1-inch pieces
1/2 cup part-skim ricotta cheese
2 Tbsp. Kraft 100% Parmesan Light Grated Cheese
1/4 tsp. black pepper

Step 1
Heat greased barbecue to medium heat.
Step 2
Prick potatoes in several places with fork or sharp knife. Grill 1 hour or until tender, turning occasionally.
Step 3
Meanwhile, process basil, garlic, lemon juice, oil, sugar, Worcestershire sauce and cayenne pepper in food processor until smooth. Place shrimp, scallops and halibut in large bowl. Add half the basil mixture; mix lightly. Refrigerate until ready to use.
Step 4
Remove potatoes from barbecue; cool slightly. Meanwhile, transfer seafood mixture to grill basket. Grill 5 to 7 min. or until shrimp turn pink, scallops are opaque and halibut flakes easily with fork, occasionally shaking grill basket to turn seafood and halibut.
Step 5
Use sharp knife to cut "X" into top of each potato; scoop out centres into medium bowl, leaving 1/8-inch-thick shells. Add ricotta, Parmesan and black pepper to potato flesh; mash until smooth. Spoon into potato shells. Top with seafood mixture.
