2 pork tenderloins, (about 3/4 lb/375 g each)
1 onion, chopped
2 Tbsp. butter
1 unpeeled red apple, chopped
1/2 cup chopped dried apricots
1 envelope Shake'N Bake Pork Coating Mix

How do I make it ?

Step 1
CUT each tenderloin lengthwise (not all the way through) and open out flat. Pound slightly to flatten.
Step 2
SAUTÉ onion in butter until softened. Stir in apple, apricots and 2 tbsp (30 mL) of the coating mix. Spread stuffing along centre of one tenderloin. Top with remaining tenderloin. Tie with string to secure.
Step 3
SPRINKLE remaining coating mix evenly over meat.
Step 4
BAKE at 400°F (200°C) for 45 minutes. Slice and serve.
