Stuffed peppers are always a hit. And this easy-to-make recipe is made extra special with the rice filling flavoured with tomato juice, oregano and feta cheese.

3 Tbsp. tomato paste
2 tsp. sugar
1 tsp. dried oregano leaves
3 cups Heinz Tomato Juice, divided
3 large green peppers
2 cups instant white rice, uncooked
2 green onions, thinly sliced
1 cup frozen corn, thawed
1-1/2 cups crumbled feta cheese with garlic and herbs, divided

Step 1
Heat oven to 400°F.
Step 2
Whisk tomato paste, sugar, oregano and 2 cups tomato juice in 13x9-inch pan sprayed with cooking spray until blended. Cut peppers lengthwise in half, leaving stem ends intact; remove and discard membranes and seeds. Place peppers, cut sides up, in prepared pan.
Step 3
Cook rice as directed on package, omitting salt and substituting remaining tomato juice for 1 cup of the water. Stir onions, corn and 1 cup cheese into rice; spoon into pepper halves. Cover.
Step 4
Bake 20 min. or until peppers are crisp-tender and heated through. Top with remaining cheese; bake, uncovered, 5 min. or until melted.
