1 Tbsp. extra virgin olive oil
1/2 lb. (225 g) boneless skinless chicken breasts, cut into thin strips
1 small yellow onion, chopped
1 clove garlic, minced
1 Tbsp. minced gingerroot
1 Tbsp. curry powder
1-1/2 cups shredded napa cabbage
1/2 cup thin red pepper strips
1/3 cup Renée's Asian Sesame Vinaigrette
110 g dry rice noodles, cooked
1 green onion, sliced
2 tsp. sesame seed, toasted

Step 1
Heat oil in wok or large skillet on medium-high heat. Add chicken; stir-fry 5 to 7 min. or until no longer pink, adding yellow onions, garlic, ginger and curry powder for the last minute.
Step 2
Add cabbage and peppers; stir-fry 2 to 3 min. or until vegetables are crisp-tender and chicken is done.
Step 3
Add vinaigrette and noodles; cook 2 to 3 min. or until heated through, stirring occasionally. Serve topped with green onions and sesame seed.
