Our Sloppy Joe-Sweet Potato Boats are a quick-fix entrée for four. Instead of buns, the sloppy joe mixture is served on top of sweet potatoes for a tasty twist on a family-favourite recipe.

2 sweet potatoes (1 lb./450 g)
1 lb. (450 g) extra-lean ground turkey
1 small red pepper, chopped
4 green onions, sliced, divided
3/4 cup Kraft Original BBQ Sauce
1 cup Cracker Barrel Shredded Double Cheddar Cheese

How do I make it ?
Pierce potatoes with fork; place in single layer on microwaveable plate. Microwave on HIGH 8 to 10 min. or until tender, turning potatoes after 5 min.
Meanwhile, cook turkey with peppers and 1/4 cup onions in large nonstick skillet on medium heat until turkey is done, stirring occasionally. Stir in barbecue sauce; cook 5 min. or until heated through, stirring frequently.
Cut each potato lengthwise in half; fluff insides with fork.
Top with turkey mixture, cheese and remaining onions.

Add 1/2 cup frozen corn to cooked turkey mixture along with the barbecue sauce.
How to Bake the Potatoes in the Oven
Heat oven to 400°F. Place pierced potatoes on foil-covered baking sheet. Bake 45 min. to 1 hour or until tender.
