2 large spaghetti squash (5 lb./ 2.2 kg)
6 Tbsp. olive oil, divided
1/2 tsp. ground black pepper
1 lb. (450 g) dry cured chorizo, sliced
1 large sweet onion, chopped
1 jar Classico Riserva Puttanesca Pasta Sauce
1/2 tsp. crushed red pepper
1 cup light ricotta cheese
1/2 cup pine nuts, toasted
6 fresh basil leaves, sliced

Step 1
Heat oven to 375°F.
Step 2
Cut squash lengthwise in half; remove and discard seeds. Brush cut sides of squash evenly with 3 Tbsp. oil; sprinkle with black pepper. Place, cut sides down, on baking sheet sprayed with cooking spray.

Bake 30 to 35 min. or until squash is tender. Cool 10 min.
Step 4
Meanwhile, heat remaining oil in large skillet on medium heat. Add chorizo and onions; cook 5 min. or until onions are crisp-tender, stirring frequently. Stir in pasta sauce and crushed pepper; simmer on medium-low heat 10 min., stirring occasionally.
Step 5
Use fork to scrape squash into spaghetti-like strands. Serve topped with pasta sauce mixture, ricotta, pine nuts and basil.

Use your Microwave
To cook the squash in the microwave instead of baking it, place squash halves, cut sides down, in microwaveable dish. Add enough water to dish to fill to 1-inch depth. Microwave on HIGH 12 min. or until squash is tender. Cool 10 min. Continue as directed.
