1 Tbsp. extra virgin olive oil
1/2 cup chopped smoked chorizo
1 lb. (450 g) new potatoes, cut into 3/4-inch pieces
1 onion, chopped
1 sweet red pepper, chopped
1 tsp. chili powder
1/4 tsp. ground black pepper
1-1/2 cups undrained canned diced tomatoes
1/2 cup Renée's Sweet Onion Vinaigrette
2 cups tightly packed baby spinach leaves
4 eggs

How do I make it ?

Step 1
Heat oil in large skillet on medium heat. Add chorizo; cook 5 min. or until evenly browned, stirring frequently.
Step 2
Add potatoes, onions, red peppers, chili powder and black pepper; stir. Cook 3 to 5 min. or until onions and peppers are softened, stirring occasionally. Add tomatoes and vinaigrette; stir. Cover; cook 20 min. or until potatoes are tender, stirring in the spinach for the last 5 min.
Step 3
Use back of spoon to press 4 small indentations into top of potato mixture. Slip cracked eggs, 1 at a time, into each indentation. Cook 5 min. or until egg whites are completely set and yolks are cooked to desired doneness.

Substitute chopped ham and 1 tsp. smoked paprika for the chorizo.
Special Extra
Sprinkle with 1/4 cup Cracker Barrel Shredded Tex Mex or Double Cheddar Cheese before serving.
