Add 1/4 cup mint, 1 Tbsp. water and 1 tsp. drink mix to 2-L glass or plastic pitcher. Use muddler or wooden spoon to press mint leaves onto bottom of pitcher to release the oils. Add remaining water and drink mix; stir until mix is dissolved.
Stir in club soda. Add lemon slices.
Serve garnished with remaining mint.
