Layers of tortillas, scrambled eggs, cheese and tomatoes make for a fun, but ultra-quick, weeknight dish.

6 eggs, beaten
6 small flour tortillas
1 cup Cracker Barrel Shredded Tex Mex Cheese
2 tomatoes, thinly sliced

How do I make it ?
Heat oven to 375°F.
Cook eggs in nonstick skillet on medium heat 5 min. or until set, stirring occasionally. Remove from heat.
Place 2 tortillas in 9-inch pie plate, overlapping as necessary to cover bottom of pie plate; top with half of the eggs, and 1/3 each of the cheese and tomatoes. Repeat layers. Top with remaining tortillas, cheese and tomatoes.
Bake 10 min. or until tortilla stack is heated through and cheese is melted.
Kraft Kitchen Tips!
Sprinkle tortilla stack with 2 Tbsp. chopped fresh cilantro after removing from oven. Serve with salsa.
