1/4 cup Kraft Zesty Italian Dressing
1 onion, chopped
4 cups chopped peeled carrots
1 lb. (450 g) sweet potatoes (about 2), peeled, cut into 1-inch pieces
2 tsp. grated gingerroot
4 cups 25%-less-sodium chicken broth
1 Tbsp. curry powder

Step 1
Heat dressing in Dutch oven or small stockpot on medium-high heat. Add onions; cook 3 min., stirring frequently. Add carrots, potatoes and ginger; cook 3 min., stirring frequently.
Step 2
Stir in chicken broth; bring to boil. Simmer on medium-low heat 25 min. or until carrots and sweet potatoes tender, stirring occasionally.
Step 3
Blend soup, in batches, in blender until smooth, returning each puréed batch to pan. Stir in curry powder; cook on low heat 5 min. or until heated through, stirring frequently.
