1 onion, chopped
2 cloves garlic, minced
6 tomatoes, chopped
1/4 cup chopped fresh parsley, divided
1 Tbsp. brown sugar
1 tsp. crushed red pepper
1 lb. (450 g) frozen uncooked cleaned large shrimp, thawed

Step 1
Heat dressing in large skillet on medium-high heat. Add onions and garlic; cook and stir 5 min. or until onions are crisp-tender. Add tomatoes, 2 Tbsp. parsley, sugar and pepper flakes; cook and stir 5 to 6 min. or until tomatoes are softened.
Step 2
Add shrimp and cheese; cook and stir 4 min. or until shrimp turn pink.
Step 3
Sprinkle with remaining parsley.
