Spinach and Cheese Lasagna may be simple in ingredients but it is big on flavour. Quicker to make than traditional meat lasagna, this is the perfect recipe when you want lasagna but are in a time crunch.

1 egg, beaten
1 container (475 g) part-skim ricotta cheese
3 Tbsp. chopped fresh parsley
1 jar (700 mL) Catelli Garden Select Garlic & Onion Pasta Sauce
12 lasagna noodles, cooked
1 pkg. (300 g) frozen chopped spinach, thawed and drained
2 cups Cracker Barrel Shredded Part Skim Mozzarella Cheese
1/4 cup Kraft 100% Parmesan Grated Cheese

Step 1
Heat oven to 350ºF.
Step 2
Mix egg, ricotta and parsley until blended.
Step 3
Spread 1/4 of the pasta sauce onto bottom of 13x9-inch baking dish sprayed with cooking spray; top with 3 noodles and 1/3 of the remaining pasta sauce. Cover with layers of 3 of the remaining noodles, ricotta mixture, spinach, and half each of the mozzarella and Parmesan. Cover with 3 of the remaining noodles and half of the remaining pasta sauce; top with remaining noodles, pasta sauce, mozzarella and Parmesan. Cover.
Step 4
Bake 40 min. or until heated through. Let stand 10 min. before cutting to serve.
