1/4 cup Renée's Spring Herb Italian Vinaigrette
1 Cornish game hen (1 lb./450 g)
1/2 cup jasmine rice, uncooked

How do I make it ?
Pour vinaigrette over Cornish hen in shallow dish; turn to evenly coat hen with dressing. Refrigerate 4 hours to marinate, turning hen after 2 hours.
Heat oven to 350°F. Remove hen from marinade; place, breast side up, in roasting pan sprayed with cooking spray. Discard marinade.
Bake hen 35 to 40 min. or until done (165ºF). About 20 min. before hen is done, cook rice as directed on package, omitting salt.
Cut hen in half. Serve with the rice.
