Roast chicken anyone? Stuffed with an orange-cranberry savoury filling, this oven-roasted chicken is ideal for simple celebrations.

1 lb. roasting chicken
1 pkg (120 g) Stove Top Stuffing Mix for Chicken
1 orange, chopped
1/2 cup each: orange juice and chopped cranberries
1 Tbsp. grated orange rind

How do I make it ?
RINSE chicken; trim off excess skin and fat. Using sharp knife or poultry shears cut chicken through backbone and remove backbone (do not remove skin). Turn chicken right-side up; flatten with palm of hand.
PREPARE stuffing according to directions, reducing water to 1\2 cup (125 mL). Add chopped orange, juice, cranberries and rind; do not cook.
EVENLY spread stuffing under skin. Thread 2 large metal skewers diagonally through chiken to keep flat while roasting.
ROAST at 400°F (200°C) on rack; covering loosely with foil, for 1 1\2 hours or until done.
