2 cups chopped rhubarb
2 cups water
2 cups chopped strawberries
1 pouch (1/4 of 56.6-g pkg.) Crystal Light Pink Lemonade Low Calorie Drink Mix
3 cups ice cubes
2 cups sparkling water, divided

Step 1
Bring rhubarb and water to boil in saucepan on medium-high heat; simmer on low heat 5 to 7 min. or until rhubarb is tender and breaks down to smooth consistency, stirring occasionally. Strain through fine-mesh sieve, gently pressing rhubarb with back of spoon to extract all liquid.
Step 2
Pour strained liquid into blender; discard pulp. Blend rhubarb liquid, strawberries and drink mix until combined. Add ice cubes and half the sparkling water; blend on high speed until thickened. Pour into 2-L glass or plastic pitcher.
Step 3
Stir in remaining sparkling water. Serve immediately.
Kraft Kitchen Tips!
Substitute diet ginger ale for the sparkling water. Recipe works equally well prepared with fresh or frozen rhubarb.
Special Extra
Slice 1 lemon and add to pitcher with 1/2 cup additional chopped strawberries. Or, garnish each glass rim with a lemon slice and whole strawberry.
