8 tomatoes
2 carrots, peeled, finely chopped
2 stalks celery, finely chopped
1 onion, finely chopped
1 Tbsp. oil
1 clove garlic, minced
1 Tbsp. fresh oregano, chopped
1/4 cup 25%-less-sodium vegetable broth
1/4 cup dry bread crumbs
2 Tbsp. KRAFT 100% Parmesan Aged Grated Cheese
1 Tbsp. non-hydrogenated margarine

Step 1
Heat oven to 350ºF.
Step 2
Cut a thin slice off the top of each tomato. Leaving a 1/2-inch shell, scoop out tomato pulp; reserve 1/2 of the tomato pulp. Invert tomatoes onto paper towels to drain.Combine tomato pulp, carrots, celery and onion in small bowl.
Step 3
Heat oil in large skillet on medium-high heat; add tomato mixture, garlic, oregano and broth. Bring to a boil; reduce heat to simmer, uncovered, 5 min. or until liquid is reduced by half. Remove from heat; cool slightly.
Step 4
Stuff tomatoes with vegetable mixture. Combine bread crumbs, Parmesan cheese and margarine in small bowl. Sprinkle mixture over tomatoes.
Step 5
Place tomatoes in shallow 2-L baking dish sprayed with cooking spray. Cover with foil; bake 25 to 30 min. or until heated through. Let stand 5 min. before serving. Serve warm or at room temperature.

Top each tomato with 1 Tbsp. Cracker Barrel Shredded Creamy Mozza Cheese. Bake an additional 2 to 3 min. or until cheese melts.
