6 slices reduced-sodium bacon, cut into 1/2-inch-thick slices
1/2 cup chopped green peppers
1/4 cup chopped onions
3/4 cup cherry tomatoes, cut in half, divided
1/2 cup sour cream
1 cup Cracker Barrel Finely Shredded 3 Cheese Mexicana Cheese
1 avocado, chopped
2 Tbsp. Kraft Italian Zesty Lime Dressing

How do I make it ?
Heat oven to 350°F.
Cook and stir bacon in medium nonstick ovenproof skillet on medium heat 4 min.; drain. Return bacon to skillet.
Add peppers, onions and 1/2 cup tomatoes to skillet; stir. Cook 3 min. or until peppers and onions are crisp-tender, stirring frequently. Remove from heat.
Whisk eggs and sour cream until blended. Add to vegetable mixture in skillet; mix well. Top with cheese; cover.
Bake 18 to 23 min. or until knife inserted in centre comes out clean. Meanwhile, toss avocados and remaining tomatoes with dressing.
Serve frittata topped with avocado mixture.

Most saucepans or skillets can be placed in an oven for short periods of time. Simply wrap the plastic handle and lid top with heavy-duty foil before placing in oven. Remember, when removing pan from oven, everything covered with foil will remain hot for at least 10 min.
Use Your Stove
Assemble frittata as directed; cook, uncovered, on medium heat 10 to 12 min. or until centre is almost set. Once the frittata can easily be released from the skillet, slide it onto a serving plate, then carefully flip the frittata over and return it to the skillet. Cook until knife inserted in centre comes out clean. Invert frittata onto plate before serving.
Prepare using any leftover cooked meats, such as ham or turkey. Also add any of your favourite chopped vegetables, such as mushrooms, green or yellow peppers, broccoli and/or spinach.
This tasty frittata can be served either hot or cold.
Garnish with chopped fresh cilantro before serving.
