1/4 cup Kraft Zesty Italian Dressing, divided
3 carrots, peeled, cut into thin ribbons
2 baby English cucumbers, cut into thin ribbons
4 skinless salmon fillets (1 lb./450 g)
8 slices prosciutto

How do I make it ?
Reserve 2 tsp. dressing; toss remaining dressing with vegetables in large bowl.
Brush salmon with reserved dressing; wrap with prosciutto. Cook in nonstick skillet on medium heat 2 min. on each side or until prosciutto is golden brown and salmon flakes easily with fork.
Serve salmon with vegetable mixture.

How to Make the Vegetable Ribbons
Use a vegetable peeler to slice the carrots and cucumbers into thin lengthwise slices. Place the carrot slices in bowl of ice water to make them curl and extra crisp.
Wrapping the salmon in the prosciutto helps keep the cooked salmon moist, while also making it easier to turn in the skillet.
The salmon can be wrapped in the prosciutto ahead of time. Refrigerate up to 4 hours before cooking as directed.
