1 sweet potato (1/2 lb./225 g), peeled, coarsely shredded
1/2 lb. (225 g) Yukon gold potato (about 2), peeled, coarsely shredded
1/3 cup flour
1 small onion, grated
2 eggs, beaten
1/4 cup oil
1/4 lb. (115 g) smoked salmon

Step 1
Microwave potatoes and onions in large microwaveable bowl on HIGH 4 to 5 min. or until potatoes are softened; cool slightly.
Step 2
Combine flour and baking powder. Add to potatoes along with the onions, eggs and dressing; mix well.
Step 3
Heat oil in large nonstick skillet on medium-high heat. Working in batches, spoon about 1 Tbsp. potato mixture into skillet; flatten with back of spatula. Cook on medium heat 1-1/2 to 2 min. on each side or until golden brown. Drain on paper towels.
Step 4
Serve latkes topped with salmon.
