Heat oil in large saucepan on medium heat. Add onions and garlic; cook 5 min., stirring frequently.
Step 2
Add remaining ingredients; stir. Bring to boil; cover. Simmer on medium-low heat 15 to 20 min. or until potatoes are tender, stirring occasionally.
Step 3
Blend soup, in small batches, in blender until smooth.

For a creamier soup, return all puréed soup to saucepan. Stir in 1 cup light cream; cook until heated through, stirring frequently.
Note
This satisfying soup will thicken upon standing. If you prefer a thinner soup, stir in enough additional vegetable broth until soup is of desired consistency. After adding the broth, return the soup to the stove if necessary to cook until heated through, stirring frequently.
