Marinated in a quick homemade sweet-and-sour sauce, this tender beef sirloin tip roast is oh so delicious. And the delicious fresh vegetable topping adds the perfect finishing touch.

1 Tbsp. zest and 2 Tbsp. juice from 3 limes, divided
1 cup canned crushed pineapple in juice (undrained)
1 cup Heinz Tomato Ketchup
1 Tbsp. coarsely ground black pepper
1 beef sirloin tip roast (3 lb./1.4 kg)
1/2 cup each finely chopped green, red and yellow peppers
1/2 cup each finely chopped fresh parsley and red onions
1/4 cup Heinz 57 Sauce Original
1 tsp. grated gingerroot
1 clove garlic, minced

Step 1
Reserve 1 tsp. lime juice for later use. Mix remaining lime juice with lime zest, pineapple, ketchup and pepper until blended. Pour over roast in large bowl; turn to evenly coat all sides of roast. Refrigerate 6 hours to marinate, turning roast occasionally.
Step 2
Heat oven to 325ºF. Remove roast from marinade; discard marinade. Place roast in shallow pan sprayed with cooking spray; cover.
Step 3
Bake 3 hours or until 150ºF, uncovering after 1 hour and basting occasionally with pan juices.
Step 4
Remove roast from oven. Let stand, covered, 15 to 20 min. or until medium doneness (160ºF). Meanwhile, combine remaining lime juice with remaining ingredients.
Step 5
Slice meat. Serve topped with vegetable mixture.
