Pour half the coconut milk mixture over chicken in medium bowl; mix lightly.
Refrigerate 30 min. to marinate. Meanwhile, refrigerate remaining coconut mixture until ready to use.
Heat greased barbecue to medium heat. Remove chicken from marinade; discard marinade. Thread 2 chicken strips onto each of 6 skewers. Grill 3 to 5 min. on each side or until done.
Mix remaining coconut milk mixture with peanut butter until blended. Serve with the chicken skewers.
