These easy-to-make Thai Chicken Skewers with Peanut Sauce start with a versatile coconut milk mixture that does double duty - half is used to marinate the chicken, and the other half serves as a base for the peanutty dipping sauce. As a bonus, these grilled skewers are quick enough to serve on a busy weeknight. Hot steamed rice and your favourite cooked fresh vegetables make the perfect sides.

1/2 cup coconut milk
1/4 cup Kraft Asian Sesame Dressing
1 Tbsp. grated gingerroot
1 Tbsp. fresh lime juice
1 Tbsp. red curry paste
1 lb. (450 g) boneless skinless chicken breasts, cut lengthwise into 12 strips
1/3 cup Kraft Peanut Butter

Step 1
Mix first 5 ingredients until blended.
Step 2
Pour half the coconut milk mixture over chicken in medium bowl; mix lightly.
Step 3
Refrigerate 30 min. to marinate. Meanwhile, refrigerate remaining coconut mixture until ready to use.
Step 4
Heat greased barbecue to medium heat. Remove chicken from marinade; discard marinade. Thread 2 chicken strips onto each of 6 skewers. Grill 3 to 5 min. on each side or until done.
Step 5
Mix remaining coconut milk mixture with peanut butter until blended. Serve with the chicken skewers.

How to Prevent Skewers from Burning
If using wooden skewers, soak them in water 30 min. before using to prevent them from burning on the barbecue or under the broiler.
Special Extra
Garnish the chicken skewers with fresh cilantro leaves, and sprinkle the peanut sauce with chopped peanuts before serving.
