1/3 cup Kraft Extra Virgin Olive Oil Tuscan Italian Dressing
2 green onions, sliced
zest and juice from 1 lemon
2 large tomatoes, thinly sliced
18 large fresh asparagus spears, trimmed, cooked until crisp-tender
1/4 cup Cracker Barrel Shredded Part Skim Mozzarella Cheese
2 Tbsp. chopped fresh parsley

How do I make it ?
Mix dressing, onions, lemon zest and juice until well blended.
Arrange tomatoes on platter; top with asparagus. Drizzle with dressing mixture.
Sprinkle with cheese and parsley.

How to Cook Asparagus
Cut or snap off ends of asparagus stalks; discard ends. Add spears to boiling water; simmer on medium-low heat 5 to 7 min. or until crisp-tender. Drain.
Choose asparagus spears with closed compact tips, round stalks and a rich green colour.
Best of Season
The best asparagus comes to market from early March to June.
How to Trim Fresh Asparagus
Asparagus spears snap off naturally where they are tough. Simply bend the spear near the bottom end and it will break off at the right point. Or, remove an inch or so of the "woody" portion off the bottom of each stalk with a sharp knife.
