1 small sweet onion
1/2 lb. (225 g) red potatoes (about 2), cut into 1-inch chunks
2 carrots, cut diagonally into 1-inch-thick slices
2 tsp. olive oil
1/2 lb. (225 g) extra-lean ground turkey
6 whole wheat saltine crackers, crushed
1 egg white
2 Tbsp. Bull's-Eye Bold Original Barbecue Sauce
2 Tbsp. Kraft 100% Parmesan Light Grated Cheese

Step 1
Heat oven to 375ºF.
Step 2
Cut onion into wedges. Chop enough of the wedges to measure 1/4 cup; set aside. Combine remaining onion wedges, potatoes and carrots in large bowl. Add oil; toss to evenly coat. Spread onto bottom of 15x10x3/4-inch pan. Bake 15 min.
Step 3
Mix turkey, chopped onions, cracker crumbs and egg white in same bowl. Remove vegetables from oven; stir, then spoon to edges of pan. Shape turkey mixture into 6x3-inch oval loaf; place in centre of pan. Brush with barbecue sauce.
Step 4
Bake 15 to 20 min. or until meatloaf is done (165ºF) and vegetables are tender. Sprinkle cheese over vegetables.
