This un-fried version of a classic Mexican recipe is perfect for spring get-togethers. It's meatless, but sure to please vegetarians and carnivores alike!

1 Tbsp. Kraft Italian Zesty Lime Dressing
1/2 cup finely chopped red peppers
1/4 cup finely chopped carrots
1 cup refried beans
1 cup Cracker Barrel Finely Shredded 3 Cheese Mexicana Cheese
1/4 cup salsa
24 small corn tortillas, warmed

How do I make it ?
Heat oven to 425ºF.
Heat dressing in medium nonstick skillet on medium-high heat. Add peppers and carrots; cook and stir 3 min. or until crisp-tender. Remove from heat.
Add beans, cheese and salsa; mix well. Spread onto tortillas; roll up tightly. Place, seam sides down, on rimmed baking sheet sprayed with cooking spray; spray with additional cooking spray.
Bake 17 to 18 min. or until crisp and golden brown.
Kraft Kitchen Tips!
For a tasty dipping sauce, mix 1/2 cup each sour cream and salsa, and 1 Tbsp. Kraft Italian Zesty Lime Dressing until blended. Serve with taquitos.
How to Heat Tortillas in the Microwave
Wrap 4 to 6 tortillas in damp paper towels. Microwave on HIGH 25 to 30 sec. or just until warmed. Repeat with remaining tortillas. Keep tortillas covered until ready to use.
Prepare using Cracker Barrel Shredded Habanero Heat Cheese.
