1 extra-large sweet potato (1 lb./450 g), cut lengthwise into 4 wedges
1/4 cup Kraft Zesty Italian Dressing, divided
1 yellow onion, chopped
3 cloves garlic, minced
3/4 cup each coarsely chopped green and red peppers
2 tsp. chili powder
1 can (19 fl oz/540 mL) black beans, rinsed
1 can (14 fl oz/398 mL) diced tomatoes, undrained
3/4 cup Kraft Shredded Medium Cheddar Cheese
2 green onions, sliced
1/4 cup sour cream

Step 1
Heat oven to 400ºF.
Step 2
Pierce potato wedges several times with fork. Microwave on HIGH 4 min. or until slightly softened.
Step 3
Place potatoes in large bowl. Add 2 Tbsp. dressing; toss to evenly coat. Place on parchment-covered baking sheet. Bake 30 min. or until tender and lightly browned around edges.
Step 4
Meanwhile, heat remaining dressing in large skillet on medium heat. Add yellow onions and garlic; cook 5 min. or until crisp-tender, stirring occasionally. Stir in peppers and chili powder; cook and stir 1 min. Add beans and tomatoes; stir. Bring to boil; simmer on medium-low heat 20 min., stirring occasionally.
Step 5
Serve potatoes topped with chili mixture, cheese, green onions and sour cream.

Special Extra
Garnish with 2 Tbsp. each chopped fresh cilantro and jalapeño peppers. Serve with lime wedges on the side.
