3 cups plain croutons
1 each small green, red and yellow pepper, chopped
1 cup sliced fresh mushrooms
1 tomato, seeded, chopped
1 small onion, chopped
1/2 cup Cracker Barrel Shredded Light Double Cheddar Cheese
1/2 cup low fat cottage cheese
1 cup Renée's Caesar Dressing, divided
1/2 cup skim milk
1/2 tsp. each dried basil and dried oregano leaves

How do I make it ?
Arrange croutons onto bottom and up side of 10-inch pie plate sprayed with cooking spray. Combine vegetables, cheeses and 1/2 cup dressing; spoon into crouton crust.
Whisk remaining ingredients, including remaining dressing, until blended; pour over vegetable mixture. Refrigerate 1 hour.
Heat oven to 350°F. Bake quiche 45 to 50 min. or until knife inserted in centre comes out clean. Let stand 15 min. before cutting to serve.
