Our Warm Barley and Lentil Salad, made with wild rice, red peppers and Kraft Italian Zesty Lime Dressing, is a refreshing change from lettuce or pasta salads. The lime in the dressing pops when the salad is served warm, but this salad is also fantastic when made ahead of time and served chilled. After one taste, you'll find this easy-to-make grain and lentil salad to be the perfect addition to any barbecue feast or potluck dinner.

3/4 cup pearl barley, uncooked
1/3 cup wild rice, uncooked
2-1/2 cups water
1 can (19 fl oz/540 mL) lentils, rinsed
2 cups frozen lima beans, thawed
1 red pepper, chopped
1/2 cup Kraft Italian Zesty Lime Dressing
1 Tbsp. lime zest

How do I make it ?
Bring barley, rice and water to boil in large saucepan; cover. Simmer on medium-low heat 45 min. or until water is completely absorbed, and barley and rice are tender. Spoon into large bowl.
Add all remaining ingredients except lime zest; mix lightly.
Spoon salad onto platter; sprinkle with lime zest.

This satisfying salad can be prepared ahead of time. Refrigerate up to 2 days before serving.
Serve with hot steamed baby bok choy.
