1 cup shredded Cracker Barrel Light Cheddar Cheese
1/4 cup Kraft 100% Parmesan Light Grated Cheese
1 tsp. dried Italian seasoning
3 zucchini, sliced
2 large tomatoes, sliced
1/4 cup dry whole wheat bread crumbs
2 green onions, sliced
1 Tbsp. non-hydrogenated margarine, melted

How do I make it ?
Heat oven to 375ºF.
Combine first 3 ingredients.
Layer half the zucchini, 1/4 cup cheese mixture and half the tomatoes in 2-L casserole dish; cover with 1/4 cup of the remaining cheese mixture. Repeat layers.
Mix remaining ingredients; sprinkle over ingredients in casserole dish.
Bake 30 to 35 min. or until vegetable mixture is heated through and topping is golden brown.

For more flavour, layer 1/4 cup chopped fresh basil with other ingredients in casserole dish before baking as directed.
